Description

A charming and delicious centerpiece for your Easter celebration! This Traditional Easter Bunny Cake is made from scratch and decorated with creamy frosting and sweet coconut flakes, creating a memorable treat for all ages.


Ingredients

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Salt
  • Unsalted butter
  • Eggs
  • Milk
  • Vanilla extract
  • Cream cheese
  • Powdered sugar
  • Shredded coconut
  • Food coloring

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease and flour a bunny cake pan.
  2. Cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add dry ingredients to wet ingredients, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
  5. Pour batter evenly into the prepared bunny cake pan.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. Prepare the cream cheese frosting: beat cream cheese and butter until smooth and creamy.
  9. Gradually add powdered sugar, beating until light and fluffy. Add vanilla extract and mix well.
  10. Once the cake is completely cooled, frost the entire cake with the cream cheese frosting.
  11. Cover the body of the bunny with shredded coconut.
  12. Tint some of the remaining coconut with food coloring to create details.
  13. Use candies or other decorations to create eyes, a nose, and whiskers.

  • Ensure butter and cream cheese are at room temperature for smooth frosting.
  • Don’t overmix the cake batter.
  • Use a serrated knife to level the cake layers for even frosting distribution.
