  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 10 ounces fresh spinach, washed and chopped
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup feta cheese, crumbled
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant. Add chopped spinach and cook until wilted, about 3-5 minutes. Remove from heat and let it cool slightly.
  2. Place the pre-made pie crust into the pie dish. In a mixing bowl, whisk together the eggs, heavy cream, nutmeg, salt, and pepper. Add the cooled spinach mixture and crumbled feta cheese to the egg mixture. Stir gently to combine.
  3. Pour the spinach and egg mixture into the pie crust. Ensure the filling is evenly distributed. If desired, you can sprinkle a little extra feta cheese on top for added flavor.
  4. Place the pie dish into the preheated oven and bake for 35-40 minutes, or until the quiche is set and the crust is golden brown. A knife inserted into the center should come out clean. Let the quiche cool for at least 10 minutes before slicing and serving.

Notes

  • For a crustless spinach quiche recipe, simply skip the pie crust and bake the filling in a greased pie dish.
