  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 2 cups heavy cream
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 1 ½ cups shredded Gruyère cheese
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tbsp unsalted butter (for greasing)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter. Thinly slice potatoes and arrange a single layer in the dish.
  2. In a saucepan, heat heavy cream with garlic, thyme, rosemary, salt, and pepper. Simmer for 3-4 minutes until fragrant.
  3. Pour half of the cream sauce over the first potato layer. Sprinkle with half of the Gruyère and Parmesan cheeses. Repeat layers.
  4. Cover with foil and bake for 45 minutes. Remove foil and bake 20-25 minutes more until golden and bubbly. Rest 10 minutes before serving.
