Learn how to make this crowd-pleasing side dish with our easy step-by-step instructions, complete with make-ahead tips and delicious variations.

Ingredients

Scale
  • 2 lbs Yukon Gold potatoes (about 6 medium)
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika (for garnish)

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Wash, peel, and thinly slice potatoes (1/8-inch thick). Arrange in overlapping layers in a greased 9×13-inch baking dish.
  2. Make the cream sauce: Melt butter, whisk in flour to create a roux. Gradually add milk and cream, stirring until thickened (about 5 minutes). Remove from heat and stir in 1 cup shredded cheese until melted.
  3. Pour sauce evenly over potatoes. Sprinkle with remaining cheese and seasonings (garlic powder, onion powder, thyme, salt, pepper, and paprika).
  4. Cover with foil and bake for 45 minutes. Remove foil and bake 20-25 minutes more until golden brown and potatoes are tender. Let rest 10 minutes before serving.

Notes

  • For extra flavor, add 1/2 cup diced ham or cooked bacon between potato layers
  • Use a mandoline slicer for perfectly even potato slices
  • Tent with foil if top browns too quickly during baking
  • Let dish rest before serving to allow sauce to thicken
  • Make-ahead option: Assemble up to 24 hours in advance and refrigerate before baking
