  • 1 cup fresh mint leaves, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon (zest and juice)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. Pat the lamb chops dry with paper towels.
  2. In a medium bowl, combine chopped mint, minced garlic, olive oil, lemon zest, salt, and pepper.
  3. Rub the marinade generously over both sides of the lamb chops.
  4. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  5. Remove the marinated lamb chops from the refrigerator and let them sit at room temperature for about 15-20 minutes.
  6. Heat a tablespoon of olive oil and two tablespoons of butter in a cast-iron skillet over medium-high heat.

  9. Remove from skillet and place on a plate. Immediately squeeze fresh lemon juice over the chops.
