- 6 slices thick-cut bacon, chopped
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika

- Β½ teaspoon black pepper
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400Β°F (200Β°C). Wash and cube potatoes into 1-inch pieces, then pat dry
- Toss potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated
- Spread potatoes in single layer on parchment-lined baking sheet and roast for 20 minutes
- Meanwhile, cook chopped bacon in skillet until crispy (8-10 minutes), then drain
- Remove potatoes from oven, sprinkle with bacon and drizzle with honey
- Return to oven for 10-15 more minutes until golden brown and caramelized
- Garnish with fresh parsley if desired and serve immediately

- For extra crispiness, broil for last 2-3 minutes (watch carefully)
