- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 2 cups cooked chicken, shredded (rotisserie chicken works great)
- 2 cups egg noodles
- Fresh parsley for garnish
Instructions
- Heat oil in a large pot and sauté onions, carrots, and celery for 5-7 minutes. Add garlic and cook 1 minute more.
- Pour in chicken broth and add bay leaves, thyme, parsley, pepper, and salt. Bring to boil then simmer 15 minutes.
- Stir in shredded chicken and simmer 5 more minutes.
- Add egg noodles and cook 6-8 minutes until al dente.
- Remove bay leaves, adjust seasoning, and garnish with fresh parsley before serving.
