- 1 cup pearl barley
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add the cubed beef and brown on all sides, about 5-7 minutes. Add onions and garlic, cooking until fragrant and translucent, about 3 minutes.
- Stir in carrots, celery, and potatoes. Cook for 5 minutes, allowing the vegetables to soften slightly.
- Add beef broth, bay leaf, and thyme. Bring to a boil, then reduce heat to a simmer. Cover and cook for 30 minutes.
- Stir in barley and continue simmering for another 30-40 minutes until barley is tender and soup has thickened. Season with salt and pepper to taste.
