Ingredients
Scale
- 12 large eggs
- 1/2 cup mayonnaise
- 2 teaspoons Dijon mustard
- 1 teaspoon white vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Paprika for garnish
- Fresh chives for garnish (optional)
Instructions
- Place eggs in a single layer in a large saucepan and cover with cold water by about 1 inch. Bring to a rolling boil over high heat, then immediately remove from heat, cover, and let stand for 12 minutes.
- Transfer eggs to an ice water bath for at least 15 minutes. Gently crack and peel the eggs under running water. Slice each egg in half lengthwise and carefully remove the yolks, placing them in a separate bowl.
- Mash the yolks with a fork until fine. Add mayonnaise, Dijon mustard, vinegar, salt, and pepper. Mix until smooth and creamy.
- Transfer the yolk mixture to a piping bag fitted with a star tip. Pipe the filling generously into each egg white half. Sprinkle with paprika and garnish with finely chopped chives.
Notes
- Use older eggs (1-2 weeks old) for easier peeling
- For extra creamy filling, add 1 tablespoon softened cream cheese
- Chill filled eggs for at least 30 minutes before serving for best texture
- Add a pinch of cayenne for a subtle kick
- Substitute Greek yogurt for half the mayo for a lighter version
