Instructions
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Form the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 375Β°F (190Β°C). On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness.
- Use an Easter egg cookie cutter to cut out shapes. Place the cut-out cookies onto baking sheets lined with parchment paper, leaving a little space between each cookie.
- Bake for 8-10 minutes, or until the edges are lightly golden. Watch them carefully to prevent burning.
- Once baked, remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, prepare the icing. In a mixing bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Add food coloring to the icing to achieve your desired colors. Transfer the icing to icing bags or squeeze bottles.
- Decorate the cooled cookies with the icing, sprinkles, edible glitter, and any other decorations you like. Let the icing set completely before serving or storing.
