  • 2 cups milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onions (for garnish)

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until no pink remains. Add the chopped onions and minced garlic, cooking until fragrant (about 2 minutes). Stir in the diced potatoes and cook for another 3 minutes to slightly soften them.
  2. Pour in the beef broth and diced tomatoes with their juices. Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer for 15-20 minutes until the potatoes are fork-tender.
  3. In a small bowl, whisk together the milk and flour until smooth. Slowly stir this mixture into the soup. Add the salt, pepper, and thyme. Continue cooking for 5-7 minutes until the soup thickens slightly.
