  • 2 lbs boneless, skinless chicken breasts
  • 8 cups chicken broth (low-sodium preferred)
  • 1 cup heavy cream
  • 1 packet ranch seasoning mix
  • 1 packet dry onion soup mix
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 8 oz egg noodles
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Sauté onion, garlic, carrots, and celery for 5 minutes.
  2. Add chicken broth and bring to a simmer. Add chicken breasts and cook for 15-20 minutes until done.
  3. Remove chicken, shred it, and return to the pot. Stir in ranch seasoning, onion soup mix, heavy cream, and cheddar cheese.
  4. Simmer for 10 minutes, then add egg noodles and cook until tender (6-8 minutes).
  5. Serve topped with crumbled bacon and fresh parsley.

  • For a low-carb version, swap egg noodles with zucchini noodles.
