- 2 lbs boneless, skinless chicken breasts or thighs
- 8 oz sliced mushrooms
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup chicken broth
- 2 tbsp Worcestershire sauce
- 1 tsp paprika
- 1/2 tsp black pepper
- 1 cup sour cream
- 2 tbsp cornstarch (optional, for thickening)
- Fresh parsley for garnish
Instructions
- Place chicken in the bottom of your crockpot. Add mushrooms, onions, and garlic on top.
- In a bowl, whisk together cream of mushroom soup, chicken broth, Worcestershire sauce, paprika, and black pepper. Pour over chicken and vegetables.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours. About 30 minutes before serving, remove chicken and shred it with two forks. Return to crockpot.
- Turn off heat and stir in sour cream. Serve over egg noodles, rice, or mashed potatoes, garnished with fresh parsley.
