  • 1 (5-7 pound) leg of lamb, bone-in or boneless
  • 4 cloves garlic, minced

  • 1/2 teaspoon black pepper
  • 1 large onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup chicken or vegetable broth

Instructions

  1. Pat the leg of lamb dry and rub with a mixture of minced garlic, olive oil, rosemary, thyme, salt, and pepper. Marinate for at least 2 hours, or preferably overnight.
  2. Preheat oven to 325°F (160°C). Place quartered onion, chopped carrots, and celery stalks in the bottom of a roasting pan.
  3. Place the seasoned leg of lamb on top of the vegetables in the roasting pan. Pour chicken or vegetable broth into the pan. Cover the roasting pan with foil.
  4. Roast for approximately 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare, 145°F (63°C) for medium, or 155°F (68°C) for medium-well.
  5. Remove the foil for the last 30 minutes of cooking to allow the lamb to brown.
  6. Once the lamb reaches your desired internal temperature, remove it from the oven and let it rest for 15-20 minutes before carving.
  7. Carve the lamb against the grain and serve with the roasted vegetables and pan juices.
