Instructions
- Pat the leg of lamb dry and rub with a mixture of minced garlic, olive oil, rosemary, thyme, salt, and pepper. Marinate for at least 2 hours, or preferably overnight.
- Preheat oven to 325°F (160°C). Place quartered onion, chopped carrots, and celery stalks in the bottom of a roasting pan.
- Place the seasoned leg of lamb on top of the vegetables in the roasting pan. Pour chicken or vegetable broth into the pan. Cover the roasting pan with foil.
- Roast for approximately 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare, 145°F (63°C) for medium, or 155°F (68°C) for medium-well.
- Remove the foil for the last 30 minutes of cooking to allow the lamb to brown.
- Once the lamb reaches your desired internal temperature, remove it from the oven and let it rest for 15-20 minutes before carving.
- Carve the lamb against the grain and serve with the roasted vegetables and pan juices.
