  • 1 packet homemade taco seasoning (recipe follows)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped (optional)
  • 1 cup water
  • Corn or flour tortillas
  • Your favorite taco toppings (shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, guacamole, etc.)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Stir in the onion and bell pepper (if using) and cook until softened, about 5 minutes. Add the homemade taco seasoning and water. Bring to a simmer, then reduce heat and cook for 10-15 minutes, or until the liquid has reduced and the mixture has thickened.
  3. While the beef is simmering, prepare your favorite taco toppings. Shred lettuce, dice tomatoes, shred cheese, chop cilantro, and set out sour cream, salsa, and guacamole.
  4. Warm the tortillas according to package directions. Fill each tortilla with the seasoned ground beef mixture and top with your favorite toppings. Serve immediately.
