  • 1 lb ground pork
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, finely chopped
  • 2 large eggs, lightly beaten
  • 1/2 cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • For the Glaze:
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard

Instructions

  1. Prep the Ingredients: Chop the onion and bell pepper, mince the garlic, and measure out the spices and breadcrumbs.
  2. Mix the Meatloaf Ingredients: In a large bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, minced garlic, chopped bell pepper, eggs, milk, Worcestershire sauce, thyme, oregano, salt, and pepper. Gently mix until just combined, being careful not to overmix.
  3. Shape the Meatloaf: Preheat oven to 350°F (175°C). Lightly grease a loaf pan. Transfer the meat mixture into the loaf pan and shape it evenly.
  4. Bake the Meatloaf: In a small bowl, whisk together the ketchup, brown sugar, and yellow mustard for the glaze. Spread half of the glaze over the top of the meatloaf. Bake for 1 hour. Then, spread the remaining glaze and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  5. Let the meatloaf rest for 10-15 minutes before slicing and serving.

  • Use a meat thermometer to ensure the meatloaf is fully cooked (160°F/71°C).
